Ransome’s Dock Parmesan Shortbreads

INGREDIENTS

8oz plain flour

8oz butter

8oz grated Parmesan cheese

4 egg yolks

good pinch Cayenne pepper

METHOD

In a food processor mix flour & butter until it looks like fine breadcrumbs.

Add Parmesan, egg yolks, cayenne pepper.

Process until the mixture just adheres.

Roll out into 1/4inch sheet, then cut into rounds.

Cook until golden brown @ 350ºF approx 5 minutes.

Eat quickly!

Ideal with a glass of chilled fino or manzanilla sherry, or a glass of fizz.
